tomato, chopped
1/4 c
green onion, minced
garlic clove, minced
eggs, beaten
1/2 c
cheddar, grated
1/2 c
monterey jack cheese with jalapeno peppers
1 tsp
chili powder
1/2 tsp
1/8 tsp
red pepper
1 can(s)
green chiles, rinsed and drained

How to Make Chile Con Queso Mini-Bites


  • 1Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
  • 2Add tomato, green onions and garlic.
  • 3Saute until onions are tender.
  • 4Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper and chopped green chiles and stir well.
  • 5Spoon 1 tablespoon of the mixture into miniature muffin pans coated with cooking spray.
  • 6Bake at 425 For 8-10 minutes or until centers are set.
  • 7Remove from oven; let cool in pans 1 minute.
  • 8Loosen edges with knife and remove from pans and serve warm.
  • 9Garnish with sliced green chiles if desired.
