Ingredients
- 1/2 cup tomato, chopped
- 1/4 cup green onion, minced
- 1 - garlic clove, minced
- 4 - eggs, beaten
- 1/2 cup cheddar, grated
- 1/2 cup monterey jack cheese with jalapeno peppers
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/8 teaspoon red pepper
- 1 can green chiles, rinsed and drained

How To Make chile con queso mini-bites

Step 1Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.

Step 2Add tomato, green onions and garlic.

Step 3Saute until onions are tender.

Step 4Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper and chopped green chiles and stir well.

Step 5Spoon 1 tablespoon of the mixture into miniature muffin pans coated with cooking spray.

Step 6Bake at 425 For 8-10 minutes or until centers are set.

Step 7Remove from oven; let cool in pans 1 minute.

Step 8Loosen edges with knife and remove from pans and serve warm.

Step 9Garnish with sliced green chiles if desired.
