Ingredients

  • 1/2 c
    tomato, chopped
  • 1/4 c
    green onion, minced
  • 1
    garlic clove, minced
  • 4
    eggs, beaten
  • 1/2 c
    cheddar, grated
  • 1/2 c
    monterey jack cheese with jalapeno peppers
  • 1 tsp
    chili powder
  • 1/2 tsp
    cumin
  • 1/8 tsp
    red pepper
  • 1 can(s)
    green chiles, rinsed and drained

How to Make Chile Con Queso Mini-Bites

Step-by-Step

  1. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
  2. Add tomato, green onions and garlic.
  3. Saute until onions are tender.
  4. Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper and chopped green chiles and stir well.
  5. Spoon 1 tablespoon of the mixture into miniature muffin pans coated with cooking spray.
  6. Bake at 425 For 8-10 minutes or until centers are set.
  7. Remove from oven; let cool in pans 1 minute.
  8. Loosen edges with knife and remove from pans and serve warm.
  9. Garnish with sliced green chiles if desired.
