Ingredients

  • 1/2 cup tomato, chopped
  • 1/4 cup green onion, minced
  • 1 - garlic clove, minced
  • 4 - eggs, beaten
  • 1/2 cup cheddar, grated
  • 1/2 cup monterey jack cheese with jalapeno peppers
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/8 teaspoon red pepper
  • 1 can green chiles, rinsed and drained
  • - green chiles, whole

How To Make chile con queso mini-bites

  • Step 1
    Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
  • Step 2
    Add tomato, green onions and garlic.
  • Step 3
    Saute until onions are tender.
  • Step 4
    Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper and chopped green chiles and stir well.
  • Step 5
    Spoon 1 tablespoon of the mixture into miniature muffin pans coated with cooking spray.
  • Step 6
    Bake at 425 For 8-10 minutes or until centers are set.
  • Step 7
    Remove from oven; let cool in pans 1 minute.
  • Step 8
    Loosen edges with knife and remove from pans and serve warm.
  • Step 9
    Garnish with sliced green chiles if desired.
