My mom makes this every Christmas, and it’s always the first thing gone. It’s so very YUM! I always threaten to run in and hide it from my dad. This recipe is doubled from the original. Just remember, cooking especially cooking for loved ones should be fun, so don’t be afraid to play around with the recipe. Add lightly sautéed veggies to the mix before cooking. Mushrooms, Zucchini, etc… or add some grilled shrimp to the top with the tomatoes, olives and green onions. Just enjoy it.
