These are my husband and father-in-law's favorite.

Ingredients

  • 2 cups butter softened (4 sticks)
  • 4 cups sharp cheddar cheese shredded
  • 4 cups all purpose flour
  • 1/2 teaspoon fine sea salt
  • 1 1/2 teaspoons cayenne pepper
  • 1 teaspoon papricka

How To Make cheese wafers

  • Step 1
    Cream butter and cheese in large bowl.
  • Step 2
    Sift flour, salt, pepper and paprika. Add to butter mixture slowly until completely blended. I use my stand mixer for this.
  • Step 3
    Cover and refridgerate for 3 hours.
  • Step 4
    Shape dough into logs wrap in wax paper and refridgerate until ready to cook.
  • Step 5
    Slice into 1/4 inch slices and put on ungreased cookie sheet. Bake at 350 for 15 minutes.
