cheese straw cookies

These make a great hors d' oeuvre. They almost taste like cheese straws but with a crunch. My friend, Mary Lou, shared this recipe with me about 30 years ago and I have been making them ever since.

Ingredients

  • 8 ounces sharp cheddar cheese, cold
  • 2 sticks butter or margarine, frozen
  • 2 cups all purpose flour
  • 1/8 teaspoon salt
  • 1 tablespoon cayenne pepper (or less)
  • 2 cups rice krispies cereal

How To Make cheese straw cookies

  • Step 1
    Grate the cold block of cheddar cheese and the cold sticks of butter into the same large bowl. Let this come to room temperature to soften. NOTE: I have also used pre-shredded cheese, put it in a bowl along with the butter and let it come to room temperature. Once it has softened I start mixing in the remaining ingredients. This works just as well.
  • Step 2
    Form several rolls of dough. Pinch off small pieces and form into quarter-sized balls. Place onto a lightly greased cookie sheet (I line mine with foil or parchment paper) then flatted each ball with a fork.
  • Step 3
    Bake for approximately 15 to 20 minutes or until lightly browned. Do not over bake do they will be too hard.
