1 lb. grated mozzarella cheese
1 1/2 cups flour
4 tbsp. snipped fresh chives
1/2 tsp. cayenne pepper
2 eggs, lightly beaten
1/2 cup cornstarch
vegetable oil for deep frying

How to Make Cheese and chive croquettes


  • 1Put mozzarella cheese, 1 cup flour, chives, cayenne pepper and eggs in bowl. Mix to combine. Shape mixture into balls, put on plate lined with plastic food wrap and refrigerate for 30 minutes.
  • 2Mix cornstarch and remaining flour on plate. Roll balls in flour mixture and chill for 10 minutes.
    Heat oil in pan til a cube of bread dropped in browns in 50 seconds, and deep fry croquettes, in batches, for 4 to 5 minutes or til golden. Drain on absorbent kitchen paper and serve. Makes 24.
