cardinal cheese log
Historic recipe from the farmhouse. I am not sure of origins or how old these recipes are. It looked like many generations added recipes to the wall as the years passed by. I enjoy them all non the less.This cheese log is called the Cardinal cheese log because of the color of the finished product, I am guessing. There may be some other meaning for the name but anyway the recipes will live on.

Ingredients
- 1 pound smooth cottage cheese
- 4 ounces smoked cheese spread
- 4 ounces roquefort cheese spread
- 4 ounces sharp cheddar cheese spread
- 1 ounce worcestershire sauce
- 1/4 teaspoon onion juice
- 4-8 tablespoons paprika
How To Make cardinal cheese log

Step 1In a mixing bowl add all ingredients, except paprika. Chill. Shape mixture into a long roll.

Step 2Sprinkle paprika on some wax paper the length of the roll and wider, for rolling. Roll cheese log in paprika until completely covered. Wrap and chill overnight.

Step 3Serve with Crackers. Makes 3 cups.
