Ingredients

  • CHEESE
  • 8 ounces wheel of brie
  • 1/2 cup sun-dried tomatoes in oil with Italian herbs
  • PESTO
  • 1 clove garlic, minced
  • 1/4 cup pine nuts
  • 2 cups basil leaves
  • 4 ounces Parmesan cheese
  • 1/2 tablespoon lemon juice
  • 1/2 dash olive oil

How To Make brie with sun-dried tomatoes and pesto

  • Step 1
    Place the Brie in the freezer for 30 minutes to be able to cut off the rind.
  • Step 2
    Place all the ingredients for the pesto in a food processor except the oil.
  • Step 3
    Process while drizzling the olive oil in.
  • Step 4
    Remove the sundried tomatoes from the oil and chop.
  • Step 5
    Remove the Brie from the freezer and cut off the papery rind.
  • Step 6
    Place on a plate and spread the pesto over the top. Top the pesto with the sun-dried tomatoes.
  • Step 7
    Let sit at room temperature for 30 minutes before serving. Serve with crackers of choice.
