Blue Ribbon Recipe

A super easy and elegant way to serve baked Brie. The store-bought puff pastry puffs and crisps and holds in the rich and creamy Brie. We loved that the brown sugar and pecans were added to the center of the cheese. The brown sugar melts with the cheese and is almost like a caramel. Serve with fresh apples and pears for a lovely contrast in flavors. Sweet and savory, this is an easy-to-make holiday appetizer.

Ingredients For brie en croute with caramel and walnuts

  • 1/2 pkg
    frozen puff pastry, thawed
  • flour, for dusting
  • 1
    round of Brie cheese, 8 oz
  • 1/4 c
    light brown sugar
  • 1/4 c
    chopped walnuts or pecans
  • 1
    egg beaten with 1 Tbsp of water

We also brushed the outside of the puff pastry with the egg wash and added a few cutout leaves to the top using the extra puff pastry for decoration.
  • Baking sheet lined with parchment paper.

    Line the baking sheet with parchment paper.
  • Puff pastry on a floured surface.

    Unfold the pastry onto a lightly floured surface.
  • Slightly rolling the puff pastry.

    Using a lightly floured rolling pin, roll the dough out slightly to smooth folds.
  • Brie cut in half and bottom piece placed on puff pastry.

    Cut the round of Brie in half. Place the bottom half of the Brie - cut side up - in the center of the pastry.
  • Brown sugar and nuts on top of the Brie.

    Gently pack sugar on top of Brie. Arrange nuts on top of sugar.
  • Top piece of Brie placed on the nuts.

    Top with the remaining half of Brie - cut side down.
  • Trimming the puff pastry.

    Trim pastry so there is only a 2" border around the brie. Reserve extra for decoration.
  • Puff pastry wrapped around Brie.

    Brush the edges of the pastry with egg wash and fold the pastry around Brie.
  • Brie placed on the baking sheet.

    Place the Brie - seam side down, onto the baking sheet. Bake for 20 minutes at 400 degrees or until the pastry is golden.

    Allow the Brie to stand for 3 minutes before serving with pear slices and/or assorted crackers.
