I went to a restaurant, Lock 15 Brewing Company in Akron, Ohio, and they served bacon jam on top of a small warm Brie wheel with crackers as an appetizer. I fell in love. I came up with this bacon jam so I could make something similar at home. I am sure you could use it on other things, but I am addicted to this appetizer, so I never have any left. Lol

Ingredients

  • 1 pound bacon, chopped into 1-inch pieces
  • 1 medium yellow onion, finely diced
  • 3 teaspoons garlic, minced
  • 1/4 cup brown sugar, firmly packed
  • 2 tablespoons honey
  • 1/4 cup white vinegar
  • 2 teaspoons apple juice, apple cider, or 1/2 teaspoon fresh lemon juice
  • 1/4 cup water
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1 Brie wheel (8 - 12 oz)
  • 1 pinch salt, more if needed
  • 1/4 cup additional water, if needed

How To Make bacon jam topped brie

  • Step 1
    In a large skillet over medium heat, cook bacon until crispy (10-12 minutes), stirring occasionally.
  • Step 2
    Transfer to a paper towel-lined plate, reserving 2 tablespoons of bacon grease in the skillet.
  • Step 3
    Add onion to bacon grease and cook over medium-low heat until caramelized (8-10 minutes).
  • Step 4
    Add garlic and cook 1-2 minutes until fragrant.
  • Step 5
    Return bacon to skillet.
  • Step 6
    Add brown sugar, honey, white vinegar, apple juice (or lemon juice, if using), water, liquid smoke, smoked paprika (if using), black pepper, and chili powder (if using).
  • Step 7
    Stir to combine.
  • Step 8
    Simmer on low heat for 45-60 minutes, stirring occasionally, until thickened to a jam-like consistency.

    Add water if it gets too thick.
  • Step 10
    Optional: Pulse in a food processor for a smoother texture or leave chunky.

    Bake an 8-12 oz Brie wheel on a baking pan at 350 degrees F (175 degrees C) for 8-12 minutes until gooey.

    Place on serving dish.
  • Step 13
    Remove rind from the top of the cheese wheel.
  • Step 14
    Top with warmed bacon jam.

    Honestly, I just eat it with the crostini or crackers and some kind of fruit when we don't have guests. When we do have company, I like to serve it on a charcuterie board with thin slices of a Granny Smith apple, grapes, baby carrots, honey-roasted pecans, crackers, and crostini.
