bacon jam topped brie
I went to a restaurant, Lock 15 Brewing Company in Akron, Ohio, and they served bacon jam on top of a small warm Brie wheel with crackers as an appetizer. I fell in love. I came up with this bacon jam so I could make something similar at home. I am sure you could use it on other things, but I am addicted to this appetizer, so I never have any left. Lol

Ingredients
- 1 pound bacon, chopped into 1-inch pieces
- 1 medium yellow onion, finely diced
- 3 teaspoons garlic, minced
- 1/4 cup brown sugar, firmly packed
- 2 tablespoons honey
- 1/4 cup white vinegar
- 2 teaspoons apple juice, apple cider, or 1/2 teaspoon fresh lemon juice
- 1/4 cup water
- 1/2 teaspoon liquid smoke
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1 Brie wheel (8 - 12 oz)
- 1 pinch salt, more if needed
- 1/4 cup additional water, if needed
How To Make bacon jam topped brie

Step 1In a large skillet over medium heat, cook bacon until crispy (10-12 minutes), stirring occasionally.

Step 2Transfer to a paper towel-lined plate, reserving 2 tablespoons of bacon grease in the skillet.

Step 3Add onion to bacon grease and cook over medium-low heat until caramelized (8-10 minutes).

Step 4Add garlic and cook 1-2 minutes until fragrant.

Step 5Return bacon to skillet.

Step 6Add brown sugar, honey, white vinegar, apple juice (or lemon juice, if using), water, liquid smoke, smoked paprika (if using), black pepper, and chili powder (if using).

Step 7Stir to combine.

Step 8Simmer on low heat for 45-60 minutes, stirring occasionally, until thickened to a jam-like consistency.

Step 9Add water if it gets too thick.

Step 10Optional: Pulse in a food processor for a smoother texture or leave chunky.

Step 11Bake an 8-12 oz Brie wheel on a baking pan at 350 degrees F (175 degrees C) for 8-12 minutes until gooey.

Step 13Remove rind from the top of the cheese wheel.

Step 14Top with warmed bacon jam.

Step 15Honestly, I just eat it with the crostini or crackers and some kind of fruit when we don't have guests. When we do have company, I like to serve it on a charcuterie board with thin slices of a Granny Smith apple, grapes, baby carrots, honey-roasted pecans, crackers, and crostini.
