Ingredients

  • PLAN/PURCHASE
  • 4 tablespoons sour cream
  • 1 teaspoon dijon mustard (i prefer grey poupon)
  • 1 medium russet potato
  • 3 tablespoons olive oil, extra virgin
  • - salt, kosher variety, to taste
  • - black pepper, freshly ground, to taste
  • 4 ounces cheddar cheese, shredded
  • 4 ounces provolone cheese, thinly sliced
  • 4 slices bacon, diced and cooked
  • 2 tablespoons chopped green onion, just the green part

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients.
  • Step 3
    Mix the sour cream and dijon mustard together in a small bowl, and reserve.
  • Step 4
    Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Step 5
    Cut the potato into even 1/4-inch (.6cm) rounds.
  • Step 6
    Add the olive oil, salt and pepper to a small bowl.
  • Step 7
    Add the sliced potatoes, and toss to evenly coat.
  • Step 8
    Place on a parchment-lined baking sheet.
  • Step 9
    Bake in the preheated oven until cooked through and starting to brown, about 20 – 25 minutes.
  • Step 10
    Remove from the oven and reserve.
  • Step 11
    Chef’s Note: Leave the potatoes on the baking sheet.

    Add some provolone cheese.
  • Step 13
    Add some cheddar cheese.
  • Step 14
    Add some diced bacon.
  • Step 15
    Pop under a broiler until the cheese is bubbly, about 2 – 3 minutes.

    Garnish with some green onion, and top with some sour cream mix. Enjoy.
