Ingredients

- 4 tablespoons sour cream
- 1 teaspoon dijon mustard (i prefer grey poupon)
- 1 medium russet potato
- 3 tablespoons olive oil, extra virgin
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- 4 ounces cheddar cheese, shredded
- 4 ounces provolone cheese, thinly sliced
- 4 slices bacon, diced and cooked
- 2 tablespoons chopped green onion, just the green part

Step 1PREP/PREPARE

Step 2Gather your ingredients.

Step 3Mix the sour cream and dijon mustard together in a small bowl, and reserve.

Step 4Place a rack in the middle position, and preheat the oven to 400f (205c).

Step 5Cut the potato into even 1/4-inch (.6cm) rounds.

Step 6Add the olive oil, salt and pepper to a small bowl.

Step 7Add the sliced potatoes, and toss to evenly coat.

Step 8Place on a parchment-lined baking sheet.

Step 9Bake in the preheated oven until cooked through and starting to brown, about 20 – 25 minutes.

Step 10Remove from the oven and reserve.

Step 11Chef’s Note: Leave the potatoes on the baking sheet.

Step 12Add some provolone cheese.

Step 13Add some cheddar cheese.

Step 14Add some diced bacon.

Step 15Pop under a broiler until the cheese is bubbly, about 2 – 3 minutes.

Step 17Garnish with some green onion, and top with some sour cream mix. Enjoy.
