- 2 1/2 cups milk
- 1/2 stick butter, cut into pieces
- 1 1/2 cups cornmeal or 3 1/2 cups of corn flour (when using the flour start with 1 1/2 then go from there
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup mozzarella cheese
- 2 tablespoons oil

Step 1Bring to boil in a small saucepan over low heat the milk. Remove from heat and add the butter

Step 2In large bowl combine the cornmeal(flour), sugar, salt, and cheese. (when using flour start with 11/2 cups and go up from there. usually takes about 2 1/2 in the end. Add the hot milk/butter mixture and let stand. cheese should melt. 1-2 minutes for soft dough to form.

Step 3Form into 12 balls and flatten with palms into patties. Heat 1 tablespoon of oil on griddle or skillet over medium high heat. Cook arepas til cooked through and slightly brown 6-8 minutes on each side. add more oil when needed Serve warm.
