a lovely logan crisp

Crispy, gooey, cheesy, fruity, salty and savory all in one! This is my entry for the LOGAN challenge and it was by far, the most challenging and most fun one, to date!

Ingredients

  • - lemongrass - just a pinch; fresh and chopped very fine
  • 2 slices oatnut bread
  • 2 - 4 slices gouda cheese (i used apple smoked gouda)
  • 1/2 - apple
  • 1/4 teaspoon nutmeg

How To Make a lovely logan crisp

  • Step 1
    Wash, peel and thinly slice the apple.
  • Step 2
    Very finely dice the lemongrass.
  • Step 3
    Mix apple with lemongrass and nutmeg. Set aside.
  • Step 4
    Place 1-2 slices of gouda on each slice of bread. Toast in convection oven until gouda softens or is semi-melted.
  • Step 5
    After you take the bread out of the convection oven, scoop on the apple mix. Enjoy :)
