crazy good eggplant pizza

My family loves eggplant but unfortunately my picky 5 year old son doesn't. So as I do on the daily researching recipes, I came across eggplant pizza. I decided to try it but I put my own spin on it and found it to not only be tasty but my son loves it too. You see, sometimes you have to use a little creativity and trickery to make some things not so appealing to a child to a favorite. You will love it too!

Ingredients

  • 2 - large eggplants
  • 2 tablespoons coarse salt
  • 2 tablespoons oil
  • 2 tablespoons italian seasoning
  • 2 cups pizza sauce
  • 1 cup shredded mozzerella
  • 1 cup cheddar cheese, shredded
  • 2 ounces pepperoni slices
  • 2 cups cooked crumbled sausage
  • - salt and pepper to taste

How To Make crazy good eggplant pizza

  • Step 1
    Slice the eggplants into 1/4 inch slices. Then sprinkle the eggplant with the coarse salt and let them sit on paper towels then wipe them dry.
  • Step 2
    Cook and crumble sausage, then set aside.
  • Step 3
    Place eggplant slices on a cookie sheet. Brush the eggplant slices with oil then sprinkle with Italian seasoning then salt and pepper.
  • Step 4
    Roast the eggplant in a preheated 400 degree oven until it turns tender about 15 minutes.
  • Step 5
    Top the eggplant with the pizza sauce, cheese, pepperoni then the crumbled sausage. Put back in the oven for 3 minutes until the cheese is melted.
