crazy good eggplant pizza
My family loves eggplant but unfortunately my picky 5 year old son doesn't. So as I do on the daily researching recipes, I came across eggplant pizza. I decided to try it but I put my own spin on it and found it to not only be tasty but my son loves it too. You see, sometimes you have to use a little creativity and trickery to make some things not so appealing to a child to a favorite. You will love it too!

Ingredients
- 2 - large eggplants
- 2 tablespoons coarse salt
- 2 tablespoons oil
- 2 tablespoons italian seasoning
- 2 cups pizza sauce
- 1 cup shredded mozzerella
- 1 cup cheddar cheese, shredded
- 2 ounces pepperoni slices
- 2 cups cooked crumbled sausage
- - salt and pepper to taste
How To Make crazy good eggplant pizza

Step 1Slice the eggplants into 1/4 inch slices. Then sprinkle the eggplant with the coarse salt and let them sit on paper towels then wipe them dry.

Step 2Cook and crumble sausage, then set aside.

Step 3Place eggplant slices on a cookie sheet. Brush the eggplant slices with oil then sprinkle with Italian seasoning then salt and pepper.

Step 4Roast the eggplant in a preheated 400 degree oven until it turns tender about 15 minutes.

Step 5Top the eggplant with the pizza sauce, cheese, pepperoni then the crumbled sausage. Put back in the oven for 3 minutes until the cheese is melted.
