    cherry tomatoes

    green onions
  • 1-2 bunch
    cilantro, fresh
  • 1 can(s)
    shoepeg corn, drained (recommended: green giant steam crisp white shoepeg corn)
  • 1 can(s)
    black eyed peas, drained
  • 2 large
    avocado ( or four small )
  • DRESSING

  • 1/4 c
    olive oil, extra virgin
  • 1/4 c
    red wine vinegar, italian ( star brand)
  • 1 clove
    garlic
  • 1/4
    fresh ground pepper
  • 1 tsp
    salt
  • 1 tsp
    cumin
  • 1 pinch
    surgar

How to Make Cowboy Caviar

Step-by-Step

  1. Combine all veggies in a large bowl.
  2. Whisk dressing ingredients together, including the garlic. Add the dressing mix and serve, or bring it to a party.
  3. Serve with tortilla chips.
