This is a delicious low carb take on the great classic: Bacon cheeseburger. All I can say is they are AWESOME.

    **anaheim peppers
  • ·
    **cheddar cheese, grated
  • ·
    **onion, diced
  • ·
    **ground beef
  • ·
    **thin bacon slices

How to Make Bacon Cheeseburger Stuffed Anaheim

Step-by-Step

  1. I threw this dish together without regards to the amount of each ingredient, but I'm guessing a 1/2 lb beef would make approx. 6 stuffed peppers.
  2. Brown your ground beef and break up as it cooks. Allow to cool then add grated cheese and diced onion and mix together.
  3. Cut just the top part of your pepper off longways. Remove seeds.
  4. Gently stuff in as much ground beef mixture as you can.
  5. Using one to two slices of bacon, depending on how long your pepper is, wrap around and secure with a toothpick.
  6. I cooked these on a smoker and it took about 1 1/2-2 hrs at 225°. You can also cook in the oven at 375° for approx. 35-45 min. Or grill with indirect heat. All your trying to do is cook until the bacon is done.
