This is a delicious low carb take on the great classic: Bacon cheeseburger. All I can say is they are AWESOME.

**anaheim peppers
**cheddar cheese, grated
**onion, diced
**ground beef
**thin bacon slices

How to Make Bacon Cheeseburger Stuffed Anaheim

Step-by-Step

  • 1I threw this dish together without regards to the amount of each ingredient, but I'm guessing a 1/2 lb beef would make approx. 6 stuffed peppers.
  • 2Brown your ground beef and break up as it cooks. Allow to cool then add grated cheese and diced onion and mix together.
  • 3Cut just the top part of your pepper off longways. Remove seeds.
  • 4Gently stuff in as much ground beef mixture as you can.
  • 5Using one to two slices of bacon, depending on how long your pepper is, wrap around and secure with a toothpick.
  • 6I cooked these on a smoker and it took about 1 1/2-2 hrs at 225°. You can also cook in the oven at 375° for approx. 35-45 min. Or grill with indirect heat. All your trying to do is cook until the bacon is done.
