Ingredients

2 jar(s)
6oz marinated artichoke hearts
1 small
oion, finely chopped
1 clove
garlic, minced
4
eggs, beaten
1/4 c
fine dry bread crumbs
1/4 tsp
salt
1/4 tsp
each: pepper, oregano, and tabasco sauce
2 c
sharp cheddar cheese, grated
1 jar(s)
4oz pimento
2 Tbsp
parsley, snipped

Step-By-Step

1Drain liquid from 1 jar of artichoke hearts and discard.
Drain liquid from 2nd jar into frying pan.
2Add onion and garlic, and sauté.
3Chop artichokes into quarters.
4Combine eggs, crumbs, salt, pepper, oregano, and Tabasco sauce.
5Stir in cheese, pimento, and artichokes.
Add onion mixture.
6Pour into 9" square buttered baking dish.
Sprinkle with parsley.
7Bake at 325 for 30 minutes, or until lightly set.
Cut in 1" squares.
