artichoke nibblers

Ingredients
- 2 jars 6oz marinated artichoke hearts
- 1 small oion, finely chopped
- 1 clove garlic, minced
- 4 - eggs, beaten
- 1/4 cup fine dry bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon each: pepper, oregano, and tabasco sauce
- 2 cups sharp cheddar cheese, grated
- 1 jar 4oz pimento
- 2 tablespoons parsley, snipped
How To Make artichoke nibblers

Step 1Drain liquid from 1 jar of artichoke hearts and discard. Drain liquid from 2nd jar into frying pan.

Step 2Add onion and garlic, and sauté.

Step 3Chop artichokes into quarters.

Step 4Combine eggs, crumbs, salt, pepper, oregano, and Tabasco sauce.

Step 5Stir in cheese, pimento, and artichokes. Add onion mixture.

Step 6Pour into 9" square buttered baking dish. Sprinkle with parsley.

Step 7Bake at 325 for 30 minutes, or until lightly set. Cut in 1" squares.
