This recipe was prepared by Sharon Morris, a Curious Cuisiner member, for the December 2014 meeting. Sharon adds: "A guaranteed hit -- just don't tell the guys about the artichokes!"

Ingredients

  • 2 jars 6oz marinated artichoke hearts
  • 1 small oion, finely chopped
  • 1 clove garlic, minced
  • 4 - eggs, beaten
  • 1/4 cup fine dry bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon each: pepper, oregano, and tabasco sauce
  • 2 cups sharp cheddar cheese, grated
  • 1 jar 4oz pimento
  • 2 tablespoons parsley, snipped

How To Make artichoke nibblers

  • Step 1
    Drain liquid from 1 jar of artichoke hearts and discard. Drain liquid from 2nd jar into frying pan.
  • Step 2
    Add onion and garlic, and sauté.
  • Step 3
    Chop artichokes into quarters.
  • Step 4
    Combine eggs, crumbs, salt, pepper, oregano, and Tabasco sauce.
  • Step 5
    Stir in cheese, pimento, and artichokes. Add onion mixture.
  • Step 6
    Pour into 9" square buttered baking dish. Sprinkle with parsley.
  • Step 7
    Bake at 325 for 30 minutes, or until lightly set. Cut in 1" squares.
