This is a great appetizer. The shrimp can be served on a frilly toothpick or arranged on lettuce leaf base on platter. This is a best made ahead and refrigerated overnight. Picture is just cooked shrimp, and not finished recipe.

- 1 1/2 pounds raw medium shrimp, shelled and deveined
- 1/2 cup picante sauce
- 1/3 cup small pimento stuffed olives, drained
- 2 tablespoons vegatable oil
- 1 tablespoon capers, drained
How To Make shrimp veracruz

Step 1Place shrimp in boiling water; simmer 2-3 minutes. Drain. Combine shrimp with all the other ingredients and toss. Place shrimp in sealed container and refrigerate at least 4 hours or up to 24 hours, turning occasionally.
