~ refreshing shrimp salad ~ cassies
I've been making some quick meals for my parents, while my mom is on the mend. I had some shrimp I needed to use up, so I used what I had in my fridge and it turned out delicious! It would be awesome served on a croissant as well, just chop up the shrimp. They are going to love this salad! Enjoy!

Ingredients
- 1/4 cup each - mayonnaise & miracle whip
- 1/4 cup red onion, small chopped
- 1 teaspoon dried dill weed
- 1 teaspoon lemon juice
- a few - grinds sea salt & fresh black pepper
- 1 - baby cucumber, peeled and diced small - about 1/4 cup - if using a larger sized cucumber, remove the seeds
- 1 medium stalk celery - sliced
- 1 cup medium - large, already cooked shrimp ~ tails removed
- Lettuce - of your choice to serve it over

Step 1Place all ingredients in a small bowl and mix well.

Step 2Stir in the shrimp and toss to evenly coat.

Step 3Serve over a bed of lettuce. Delicious! Could also chop the shrimp and this would be delicious served on a croissant.
