gary's brandy'd shrimp in green sauce
I got this recipe from a magazine years ago and made some tweaks here and there. It goes great with a glass of white wine and your favorite salad

Ingredients
- 6 tablespoons olive oil, extra virgin
- 8 cloves garlic chopped
- 4 tablespoons brandy
- 2/3 cup dry white wine
- 1 cup chopped fresh parsley
- to taste - kosher salt and black pepper
- 1 pound large shrimp peeled and deveined tails on
- - warm baguette slices
How To Make gary's brandy'd shrimp in green sauce

Step 1Heat 2 tbs olive oil in a skillet over medium heat add garlic and cook till softened. Add 2 tbs brandy and swirl the pan until the alcohol evaporates. Add the wine and 1/3 cup of water and cook to reduce slightly. Stir in parsley and the salt and pepper to taste.

Step 2Transfer the mixture to a blender add 2tbs olive oil and 1tbs brandy and puree until smooth.

Step 3In the same skillet with the residual juices heat remaining 2tbs olive oil over high heat add the shrimp cooking till just pink. Add the brandy sauce and season with salt and pepper to taste and warm through. Drizzle with 1tbs water and 1tbs brandy and mix in to loosen the sauce.

Step 4Serve with the bread.
