Crispy Baked Tuna Balls - Good!
The ingredients can be adjusted to your liking - I sometimes saute the almonds first for extra crunch and flavor. I prefer the potato chip coating over the corn flakes, although both ways are good.
Serve on cocktail picks for an appetizer.

1 6.5-oz can(s)water packed tuna, drained
1/4 -1/2 cfine dry bread crumbs
2 Tbspminced onion
2 Tbspchopped parsley
2 Tbspchopped almonds
1 Tbsplemon juice
3 Tbspbutter, melted
1 ccrushed potato chips or crushed corn flakes
How to Make Crispy Baked Tuna Balls - Good!
- Pre-heat oven to 350 degrees.
- In bowl, thoroughly mix together the tuna, bread crumbs, onion, parsley, almonds, mayonnaise, lemon juice, mustard, and egg. Shape into 1-inch balls.
- Dip each ball in the melted butter. then roll to coat in the chips or corn flakes. Place in shallow baking pan. Bake about 10 minutes, or until light brown.
