bacon shrimp scampi appetizer

This is a very delicious appetizer. Your friends will be very pleased if you serve this at your next gathering. I absolutely love it. The bacon adds a delicious accent to this Scampi dish.

Ingredients

  • 1 pound large or jumbo raw shrimp peeled,and cleaned with tails still attached.
  • 5 - slices of bacon chopped and cooked. reserve drippings
  • 4 tablespoons butter
  • 3 - large cloves of garlic
  • 1/3 cup white wine
  • 1 pinch cayenne pepper
  • 2/3 cup seasoned panko bread crumbs
  • 3 tablespoons chopped parsley

How To Make bacon shrimp scampi appetizer

  • Step 1
    Peel the shrimp,and butterfly it. Do this by gently running a knife in the back of the shrimp. Do not cut all the way through the back.
  • Step 2
    Cook the bacon until brown and crisp. remove bacon,and set aside. Chop the garlic and parsley.
  • Step 3
    Remove half the bacon drippings. Add the 5 tablespoons of butter until melted. Add the chopped Garlic,pinch of Cayenne pepper, and shrimp. Cook for a couple minutes on both sides.
  • Step 4
    Add the wine,and cook for another 2 minutes. If using a cast iron skillet. Sprinkle the bread crumbs,bacon,and parsley on top. Place under broiler until crumbs are browned,or pour the shrimp/wine mixture in to a small casserole dish. Top with the bacon ,bread crumbs,and parsley. Place under broiler,and brown. Serve
