fall curried egg salad
This is such a great twist on a classic. I made this and think I will be making egg salad like this for now on. Every flavor pops in this simple recipe.

Ingredients
- 1/3 cup mayonnaise
- 1 tablespoon fresh lime juice
- 11/2 teaspoons curry powder
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt
- 1 pinch cayenne pepper
- 6 - hard boiled eggs
- 1 cup finely chopped granny smith apple
- 1/3 cup finely chopped red onion
- 2 tablespoons chopped fresh cilantro (or more)
How To Make fall curried egg salad

Step 1Whisk together first 6 ingredients in bowl. Dice eggs, apples, and onion about same size. Chopped cilantro and add all to Mayo mix, stir to combine. Serve on Your favorite bread. I served open face with another pinch of pepper, for a lite lunch. Also is a great app!
