Ingredients

  • 1 can (10 oz) enchilada sauce
  • 1 can (20 oz) crushed pineapple-drained
  • 1/4 cup sour cream
  • 2 cups shredded cheddar cheese
  • 6 - 8 inch flour tortillas

How To Make pineapple enchiladas

  • Step 1
    preheat oven to 375 degrees
  • Step 2
    in a medium bowl combine pineapple, sour cream and 1 cup cheese
  • Step 3
    pour 1/4 cup enchilada sauce in the bottom of a 9x13 inch baking dish
  • Step 4
    fill tortillas with pineapple mixture, roll and place in baking dish
  • Step 5
    pour on remaining enchilada sauce and sprinkle with remaining cheese
  • Step 6
    bake, covered, for 30 minutes
