Ingredients
- 1 can (10 oz) enchilada sauce
- 1 can (20 oz) crushed pineapple-drained
- 1/4 cup sour cream
- 2 cups shredded cheddar cheese
- 6 - 8 inch flour tortillas
How To Make pineapple enchiladas

Step 1preheat oven to 375 degrees

Step 2in a medium bowl combine pineapple, sour cream and 1 cup cheese

Step 3pour 1/4 cup enchilada sauce in the bottom of a 9x13 inch baking dish

Step 4fill tortillas with pineapple mixture, roll and place in baking dish

Step 5pour on remaining enchilada sauce and sprinkle with remaining cheese

Step 6bake, covered, for 30 minutes
