Found these to be super easy to make. Makes for a nice little luncheon tidbit. I think the next time I make them I will put in small pieces of marachino cherries for that extra bit of color and taste.

yellow cake mix (2 layer)
1 tsp
coconut extract
1 tsp
rum flavoring
1 c
flaked coconut
1 c
chopped nuts (preferably macadamia or pecans, i used pecans
1 c
drained crushed pineapple

How to Make Pina Colada Muffins

Step-by-Step

  • 1Prepare the cake mix according to package directions. Stir in the coconut extract, rum flavoring, coconut, nuts and pineapple.
  • 2Fill greased or paper-lined muffin cups 3/4 full.
  • 3Bake at 350 degrees for 15 to 20 minutes or until a wooden pick inserted in the center comes out clean. You may bake in mini muffin pans. 12 minutes for the mini's.
