Found these to be super easy to make. Makes for a nice little luncheon tidbit. I think the next time I make them I will put in small pieces of marachino cherries for that extra bit of color and taste.

yield about 75 to 80 mini muffins or 30 regular muffins

Ingredients

  • 1 box yellow cake mix (2 layer)
  • 1 teaspoon coconut extract
  • 1 teaspoon rum flavoring
  • 1 cup flaked coconut
  • 1 cup chopped nuts (preferably macadamia or pecans, i used pecans
  • 1 cup drained crushed pineapple

How To Make pina colada muffins

  • Step 1
    Prepare the cake mix according to package directions. Stir in the coconut extract, rum flavoring, coconut, nuts and pineapple.
  • Step 2
    Fill greased or paper-lined muffin cups 3/4 full.
  • Step 3
    Bake at 350 degrees for 15 to 20 minutes or until a wooden pick inserted in the center comes out clean. You may bake in mini muffin pans. 12 minutes for the mini's.
