Ingredients
- 8 ounces elbow macaroni
- 6 large slices prosciutto cut in half and put in freezer to firm them up a bit
- 3 tablespoons butter divided
- 1/4 cup panko bread crumbs
- 1 tablespoon plus 2 tsp. flour
- 1 1/4 cups milk
- 1 1/2 cups shredded monterey jack cheese
- 3/4 cup shredded cheddar cheese
- 1 teaspoon dijon mustard
- 1 teaspoon salt
How To Make macaroni and cheese cups

Step 1cook macaroni and reserve 1/4 cup water.

Step 2Preheat oven 375 degrees

Step 3Melt 1 tbsp. butter in pan and add panko and cook 3 minutes. Remove from heat and set aside.

Step 4Melt 2 tbsp. butter in pan add flour and cook 2 minutes. Whisk in milk and cook 5 minutes until thickened. Remove from heat.

Step 5Add pasta water, cheeses, mustard and salt. Stir in macaroni

Step 6Put 1 slice of proscuitto in each muffin pan cup. Press it around to shape the cup. Top with macaroni and cheese mixture. Sprinkle with panko.

Step 7Bake 20 to 25 minutes.
