elbow macaroni
6 large
slices prosciutto cut in half and put in freezer to firm them up a bit
3 Tbsp
butter divided
1/4 c
panko bread crumbs
1 Tbsp
plus 2 tsp. flour
1 1/4 c
1 1/2 c
shredded monterey jack cheese
3/4 c
shredded cheddar cheese
1 tsp
dijon mustard
1 tsp

How to Make Macaroni and Cheese cups


  • 1cook macaroni and reserve 1/4 cup water.
  • 2Preheat oven 375 degrees
  • 3Melt 1 tbsp. butter in pan and add panko and cook 3 minutes. Remove from heat and set aside.
  • 4Melt 2 tbsp. butter in pan add flour and cook 2 minutes. Whisk in milk and cook 5 minutes until thickened. Remove from heat.
  • 5Add pasta water, cheeses, mustard and salt. Stir in macaroni
  • 6Put 1 slice of proscuitto in each muffin pan cup. Press it around to shape the cup. Top with macaroni and cheese mixture. Sprinkle with panko.
  • 7Bake 20 to 25 minutes.
