Cute and unique appetizer. I mad these in mini muffin pans also. Yummy

Ingredients

  • 8 ounces elbow macaroni
  • 6 large slices prosciutto cut in half and put in freezer to firm them up a bit
  • 3 tablespoons butter divided
  • 1/4 cup panko bread crumbs
  • 1 tablespoon plus 2 tsp. flour
  • 1 1/4 cups milk
  • 1 1/2 cups shredded monterey jack cheese
  • 3/4 cup shredded cheddar cheese
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt

How To Make macaroni and cheese cups

  • Step 1
    cook macaroni and reserve 1/4 cup water.
  • Step 2
    Preheat oven 375 degrees
  • Step 3
    Melt 1 tbsp. butter in pan and add panko and cook 3 minutes. Remove from heat and set aside.
  • Step 4
    Melt 2 tbsp. butter in pan add flour and cook 2 minutes. Whisk in milk and cook 5 minutes until thickened. Remove from heat.
  • Step 5
    Add pasta water, cheeses, mustard and salt. Stir in macaroni
  • Step 6
    Put 1 slice of proscuitto in each muffin pan cup. Press it around to shape the cup. Top with macaroni and cheese mixture. Sprinkle with panko.
  • Step 7
    Bake 20 to 25 minutes.
