Loaded Mashed Potato Bites

Found a great way to use up leftover mashed potatoes. These remind me of those bites that they used to serve at Arby's. Hope you enjoy.

Yum! These taste just like a loaded baked potato. They'd be great for a party and a perfect recipe for leftover mashed potatoes.

Just make sure your mashed potatoes are pretty stiff. If not, add about 1/4 cup of flour to the mix to stiffen them so that they'll hold together when frying. The Test Kitchen

  • 2 c
    leftover mashed potatoes
  • 1
    egg, beaten
  • 3/4 c
    shredded cheddar cheese
  • 1/4 c
    minced onion
  • 1/4 c
    bacon bits
  • 1/2 c
    panko bread crumbs
  • 1 Tbsp
  • 1/4 tsp
    salt and pepper
  • ·
    oil for frying

How to Make Loaded Mashed Potato Bites


  1. mix all ingredients except for bread crumbs together in a large bowl. (this recipe calls for leftover mashed potatoes so the potatoes will most likely already be seasoned so add just a bit more salt and pepper.)
  2. shape into 1 inch balls or use a cookie scoop. roll balls in bread crumbs to coat completely.
  3. heat 1 inch of oil to 375 degrees in an electric skillet or use large frying pan on stovetop. fry potato balls in small batches for 2-3 minutes until golden brown. drain on paper towels.
