Loaded Mashed Potato Bites

Yum! These taste just like a loaded baked potato. They'd be great for a party and a perfect recipe for leftover mashed potatoes.
Just make sure your mashed potatoes are pretty stiff. If not, add about 1/4 cup of flour to the mix to stiffen them so that they'll hold together when frying. The Test Kitchen
2 cleftover mashed potatoes
3/4 cshredded cheddar cheese
1/4 cminced onion
1/4 cbacon bits
1/2 cpanko bread crumbs
1/4 tspsalt and pepper
·oil for frying
How to Make Loaded Mashed Potato Bites
- mix all ingredients except for bread crumbs together in a large bowl. (this recipe calls for leftover mashed potatoes so the potatoes will most likely already be seasoned so add just a bit more salt and pepper.)
- shape into 1 inch balls or use a cookie scoop. roll balls in bread crumbs to coat completely.
- heat 1 inch of oil to 375 degrees in an electric skillet or use large frying pan on stovetop. fry potato balls in small batches for 2-3 minutes until golden brown. drain on paper towels.
