italian egg salad
This is a nice alternative to the regular mayo-based egg salad that may go in sandwiches (this one does not!). It came from an employee who has been gracious enough to share some of his favorite Italian recipes.

- 4 large eggs, hard boiled
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 small scallion, minced
- 1 stalk celery, minced
- 1 teaspoon fresh parsley, minced
- 1/4 teaspoon salt
- 1 pinch pepper, freshly ground
How To Make italian egg salad

Step 1Peel and slice hard boiled eggs.

Step 2Whisk together oil and vinegar, then add all remaining ingredients.
