Comfort at it's finest. Do a day ahead appetizer. Frozen balls work best for dredging.

Ingredients

  • 1 pound elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups warm milk
  • 1 pound grated smoked gouda
  • 1 pound grated cheddar cheese
  • - salt and pepper to taste
  • 2 large eggs
  • 3 cups panko bread crumbs
  • - oil for frying
  • - marinara or alfredo sauce for dipping

How To Make fried mac and cheese balls

  • Step 1
    Cook macaroni, drain well.
  • Step 2
    In saucepan melt the butter and add the flour stirring to make a roux. Slowly add in the warm milk stirring constantly until thickened.
  • Step 3
    Remove from heat and add the cheeses. Stir until melted.
  • Step 4
    Season with salt and pepper. Stir in the macaroni
  • Step 5
    Refrigerate until cold. Roll into balls and freeze overnight.
  • Step 6
    Beat the eggs with a little milk and set in a dish. Put bread crumbs in separate dish. Dredge the frozen mac balls in egg wash and then roll in bread crumbs.
  • Step 7
    Deep fry at 350 degrees until golden. Serve with dipping sauce.
