- 1 pound meat loaf mix
- 1/2 cup ricotta cheese
- 1 large egg
- 1/4 cup bread crumbs
- 1/4 cup fresh parsley
- 2 tablespoons fresh basil
- 1/4 cup minced onion
- 3-4 cloves garlic minced
- 1 teaspoon oregano, dried
- 1 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon sugar
- 1/4 cup parmesan cheese
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon fennel (ground)

Step 1Preheat oven to 450. Mix all ingredients together, form golf ball size meatballs,I like to use a cookie scoop,it's easier to make them uniform.

Step 2Place on rack in a baking pan, and bake 35- 40 min. These freeze beautifully, placed on a jellyroll pan until frozen, then put in a zip lock bag.
