No one will be able to tell this is made with ground chuck. Freezes well but tastes better freshly baked. My cousin also gave me this recipe.

Ingredients For summer sausage

  • 2 lb
    ground beef chuck
  • 2 tsp
    liquid smoke- i use more
  • 1/2 tsp
    garlic powder-not salt!
  • 1 c
    water
  • 2 Tbsp
    morton's tender quick salt

How To Make summer sausage

  • 1
    Mix all ingredients in a large bowl till well blended. Form into 2-2" rolls or logs. Wrap in Saran wrap. Refrigerate 24 hours. Bake uncovered for 1 1/2 hour on a broiler pan turning frequently with tongs at 300 degrees. Slice and enjoy with sliced cheese and Trisket crackers.
