applewood smoked bacon
1 1/2 lb
roughly chopped & core removed
1
red pepper, roughly chopped & seeds removed
1
cucumber, peeled & roughly chopped
1/4
chopped sweet onion
1
garlic clove
1
lime juice
2 c
tomato juice
1
kosher salt
2
red pepper
1 tsp
parsley
3 Tbsp
red wine vinegar

How to Make Smoky Bacon Gazpacho

Step-by-Step

  • 1Cook Baron until it is crispy. Rid it of any grease by patting it down on two with paper towels.
  • 2Add tomatoes, pepper, cucumber, onion, garlic clove, lime juice, V8 (or tomato juice), olive oil, and herbs into a blender and blend until smooth.
  • 3Now add the rest of the seasonings (salt, pepper, red pepper flakes, vinegar) slowly and adjust to taste.
  • 4Let it sit for 24 hour and chill inside the refridgerator
  • 5Garnish with chopped peppers, green onion, black pepper, and a drizzle of olive oil just before serving.
