Ingredients

  • 1 package applewood smoked bacon
  • 1 1/2 pounds roughly chopped & core removed
  • 1 - red pepper, roughly chopped & seeds removed
  • 1 - cucumber, peeled & roughly chopped
  • 1/4 - chopped sweet onion
  • 1 - garlic clove
  • 1 - lime juice
  • 2 cups tomato juice
  • 1 - kosher salt
  • 2 - red pepper
  • 1 teaspoon parsley
  • 3 tablespoons red wine vinegar

How To Make smoky bacon gazpacho

  • Step 1
    Cook Baron until it is crispy. Rid it of any grease by patting it down on two with paper towels.
  • Step 2
    Add tomatoes, pepper, cucumber, onion, garlic clove, lime juice, V8 (or tomato juice), olive oil, and herbs into a blender and blend until smooth.
  • Step 3
    Now add the rest of the seasonings (salt, pepper, red pepper flakes, vinegar) slowly and adjust to taste.
  • Step 4
    Let it sit for 24 hour and chill inside the refridgerator
  • Step 5
    Garnish with chopped peppers, green onion, black pepper, and a drizzle of olive oil just before serving.
