Ingredients
- 1 package applewood smoked bacon
- 1 1/2 pounds roughly chopped & core removed
- 1 - red pepper, roughly chopped & seeds removed
- 1 - cucumber, peeled & roughly chopped
- 1/4 - chopped sweet onion
- 1 - garlic clove
- 1 - lime juice
- 2 cups tomato juice
- 1 - kosher salt
- 2 - red pepper
- 1 teaspoon parsley
- 3 tablespoons red wine vinegar
How To Make smoky bacon gazpacho

Step 1Cook Baron until it is crispy. Rid it of any grease by patting it down on two with paper towels.

Step 2Add tomatoes, pepper, cucumber, onion, garlic clove, lime juice, V8 (or tomato juice), olive oil, and herbs into a blender and blend until smooth.

Step 3Now add the rest of the seasonings (salt, pepper, red pepper flakes, vinegar) slowly and adjust to taste.

Step 4Let it sit for 24 hour and chill inside the refridgerator

Step 5Garnish with chopped peppers, green onion, black pepper, and a drizzle of olive oil just before serving.
