~ simply glazed kielbasa over rice ~

My son especially loves this quick and easy meal. The Kielbasa can be served over rice, as an appetizer or as a side. Enjoy!

Ingredients

  • 1 pound kielbasa - sliced
  • 1 cup apricot preserves
  • 1/4 teaspoon each - pepper, ground ginger, garlic powder
  • 1 1/2 tablespoons lemon juice
  • 2 teaspoons dijon mustard
  • rice - prepared

How To Make ~ simply glazed kielbasa over rice ~

  • Step 1
    In a medium sized skillet over medium heat, whisk together all ingredients but the rice and kielbasa. Once the preserves have melted and all has come to a simmer. Add the sliced kielbasa and turn the heat to low. Leave simmer for 45 minutes to an hour. Stirring occasionally.
  • Step 2
    Plate rice and spoon Kielbasa and sauce over it. Yum! One of those easy meals that gets better the longer it cooks. Enjoy!
