~ meatball sliders ~

I made these little meatball sandwiches for a Christmas eve party a few years ago, and they were the hit of the party...the meatballs are delicious and a fresh slice of mozzarella cheese melted over the top, served on sweet Hawaiian rolls...DELICIOSO!!

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 2 - eggs
  • 1/4 - 1/2 cup italian bread crumbs
  • 1/3 cup minced green onions
  • 2 cloves minced garlic
  • 1/4 cup minced fresh parsley
  • 1/2 cup grated parmesan cheese - optional, they are great without as well...i didn't use this time
  • 1/2 teaspoon ground black pepper and salt
  • med jar 24 ounces - marinara sauce - i used bertoli with wine - or can use homemade
  • 1 package hawaiian bread rolls
  • fresh - mozzarella - 12 sliced or can cut 6 large slices in half
  • oil - for frying

How To Make ~ meatball sliders ~

  • Step 1
    In a medium bowl, add the first 9 ingredients and blend just until everything is incorporated. I use my fingers.
  • Step 2
    In a large skillet add about 1/4 cup of oil and turn heat to medium - med high. Roll meatballs, about the size of a golf ball. Place in hot grease and using a large spoon, turn as they brown. Once all are browned, drain on paper towel...
  • Step 3
    I then wash out the same pan and add marinara or spaghetti sauce to the pan. Place the meatballs into the sauce ( I sprinkle with a little shredded parm.) and simmer for about 20 minutes, making sure meatballs are completely cooked in the center.
  • Step 4
    Turn oven on to 375 degree F. On a sheet pan, lay opened sandwich rolls and bake, just long enough to get a little crunchiness. A bout 5 minutes... Remove from oven.
  • Step 5
    Set the tops aside and on the bottom half of buns; place a meatball and some sauce. Lay a slice or half a slice, (depending on how big your slices are) on top of the meatball.
  • Step 6
    Turn oven to broil and place meatballs under broiler. Broil just long enough to melt the cheese or gets a little browning.
  • Step 7
    Remove from oven, place on the tops and secure with picks. Serve with extra warm sauce and enjoy...they are scrumptious!
