A good way to have the kids eat their spinach...

Ingredients

  • 16 ounces package of frozen chopped spinach thawed & drained
  • 1 box cornbread stovetop stuffing mix
  • 4 large eggs
  • 1/2 cup (irish) butter or unsalted
  • 1 medium onion finely chopped
  • 1 cup grated parmesan cheese
  • 1 dash salt & pepper

How To Make spinach balls

  • Step 1
    Preheat oven at 350F Melt butter in a large pan over medium heat. Add onion, cook 5 minutes until soft & translucent. Remove pan from heat.
  • Step 2
    Remove excess water from thawed spinach by pressing it between two paper towels.
  • Step 3
    In a large bowl combine the spinach, stovetop stuffing mix, parmesan cheese, eggs, onion, salt & pepper. Combine well.
  • Step 4
    Line a baking sheet with parchment paper. Using your hands, roll the mixture to form individual 1~inch balls. Place each one on prepared baking sheet.
  • Step 5
    Bake for 15-20 minutes of until very slightly browned. Serve with your favorite dip or sauce.
