Ingredients

  • 16 oz
    package of frozen chopped spinach thawed & drained
  • 1 box
    cornbread stovetop stuffing mix
  • 4 large
    eggs
  • 1/2 c
    (irish) butter or unsalted
  • 1 medium
    onion finely chopped
  • 1 c
    grated parmesan cheese
  • 1 dash(es)
    salt & pepper

How to Make SPINACH BALLS

Step-by-Step

  1. Preheat oven at 350F

    Melt butter in a large pan over medium heat. Add onion, cook 5 minutes until soft & translucent. Remove pan from heat.
  2. Remove excess water from thawed spinach by pressing it between two paper towels.
  3. In a large bowl combine the spinach, stovetop stuffing mix, parmesan cheese, eggs, onion, salt & pepper. Combine well.
  4. Line a baking sheet with parchment paper.
    Using your hands, roll the mixture to form individual
    1~inch balls. Place each one on prepared baking sheet.
  5. Bake for 15-20 minutes of until very slightly browned.
    Serve with your favorite dip or sauce.
