Ingredients
- 16 ounces package of frozen chopped spinach thawed & drained
- 1 box cornbread stovetop stuffing mix
- 4 large eggs
- 1/2 cup (irish) butter or unsalted
- 1 medium onion finely chopped
- 1 cup grated parmesan cheese
- 1 dash salt & pepper
How To Make spinach balls

Step 1Preheat oven at 350F Melt butter in a large pan over medium heat. Add onion, cook 5 minutes until soft & translucent. Remove pan from heat.

Step 2Remove excess water from thawed spinach by pressing it between two paper towels.

Step 3In a large bowl combine the spinach, stovetop stuffing mix, parmesan cheese, eggs, onion, salt & pepper. Combine well.

Step 4Line a baking sheet with parchment paper. Using your hands, roll the mixture to form individual 1~inch balls. Place each one on prepared baking sheet.

Step 5Bake for 15-20 minutes of until very slightly browned. Serve with your favorite dip or sauce.
