snake balls with a kick
I came up with this recipe after a friend of mine and I went to lunch at a Texas Road House Restaurant and we had their "Rattlesnake Bites". We liked them so much that I just had to try and recreate the recipe. Since then my friend made them at a family cook off but added the bacon to the recipe and won by a land slide! Hope you like them as much as we all do.

Ingredients
- 2 cups shredded pepper jack chesse
- 1 cup shredded colby jack cheese
- 1/2 cup fresh bacon bits
- 3 - jalapeno peppers, finely diced
- 1 to 22 - red bell peppers, finedly diced
- 4 cups italian bread crumbs, i used galric flavored
- - eggs for egg wash
- - oil for deep frying
How To Make snake balls with a kick

Step 1Fry bacon until crisp. drain on paper towels. crumble.

Step 2Heat oil to 400 degrees

Step 3In med. bowl combine cheeses, bacon, red peppers, and jalapenos. Using your hands roll into balls, then roll the balls into egg wash, then into the bread crumbs. Repeat to get 2 layers of egg and bread crumbs on the balls.

Step 4fry cheese balls in hot oil for about 2 to 3 minutes or until crispy but not oozing cheese. Drain on paper towels. Serve with your favorite dip. I use 1 guacamole, 1 cup ranch dip mixed well and a few drops to taste sriracha in another 1 cup ranch dip. Enjoy
