Ingredients

  • 2 boxes frozen mini phyllo cups
  • 1 cup ricotta cheese
  • 10 ounces pkg. frozen spinach thawed
  • 2 large eggs
  • 1 tablespoon cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 clove garlic minced
  • 1/4 cup grated parmesan cheese plus more for sprinkling on top

How To Make ricotta spinach mini phyllo cups

  • Step 1
    Preheat oven 350 degrees. Squeeze the spinach dry.
  • Step 2
    Mix all ingredients except phyllo shells.
  • Step 3
    Fill each shell with spinach mixture. Place on cookie sheet. Sprinkle parmesan overtop. Bake 20 min.
