mexican cheese dip

I made up this dip recipe off the top of my head. I'm a Culinary Arts student and am continually looking for new recipes to try. After tinkering with this idea, and letting my friends try it, they were blown away! Christopher Gonzalez Greenwood, AR

Ingredients
- 1 medium yellow onion, medium dice
- 1 medium red or green bell pepper, medium dice
- 2 medium fresh tomatoes, medium dice
- 1 large jalapeno pepper, finely chopped, core & seeds included
- 1 cup skim milk
- 1 - block of white con queso cheese
- 1/4 teaspoon powdered cayenne pepper
- 2 tablespoons fresh cilantro, minced
- 2 cloves fresh garlic, minced
- 1 (lg.) bag tortilla chips
- 1/2 teaspoon salt
How To Make mexican cheese dip

Step 1Chop and/or mince the vegetables as required, then set aside.

Step 2Use non-stick boiling pot to slowly melt down Con Queso cheese w/1 cup Skim Milk on medium-low heat. (Works best when 1/2 the milk and 1/2 the cheese block are melted, then re-peated.)

Step 3Pour vegetables into large bowl. Pour Mexican cheese sauce over vegetables while hot, then add salt and cayenne pepper. Stir well for about a minute. Serve with tortilla chips.
