1/2 cup minced onion
2 10-ounce packages frozen chopped spinach, defrosted and squeezed dry
3/4 cup ricotta
2 eggs, beaten
3/4 cups grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon fresh black pepper
1/2 teaspoon freshly grated nutmeg
3/4 cup to 1 cup all-purpose flour, plus more for coating hands
