I've tested a number of recipes for Amish Mustard Eggs. This one is my favorite, it has a touch of sweetness similar to the mustard eggs you find on salad bars in some Amish restaurants.

Here's the ingredient list...

4 tablespoons yellow mustard (the recipe provides an option for spicy brown mustard, but those eggs do not resemble what you find in Amish restaurants at all.)

3/4 cup white vinegar (I use Apple Cider Vinegar)
•
3/4 cup water
•
2/3 cup sugar
•
1/8 tablespoon salt
•
2 or 3 drops yellow food coloring (I do not use it.)
