"Matthew Juzenas, West Allis, requested the recipe for a sweet potato salad served at Allgauer's in the Park at the Hilton Garden Inn, 11600 W. Park Place. He wrote: "This salad was part of their salad bar this week. It was so fresh and delicious that we actually came back the next day specifically to have it again. I would love to have this recipe in my rotation for delicious side dishes." James Nowak, executive chef of the Hilton Garden Inn Convention Center and Allgauer's in the Park restaurant, sent the recipe and said he was happy to pass it on to Journal Sentinel readers. He wrote: "This is one of most asked for salads on our all-you-can-eat pasta and lunch buffets and also on our Saturday night all-you-can-eat prime rib and crab legs buffet. I have sent this recipe out to so many. They just love how the flavors interact with each other and the crunch you get from the candied walnuts." 1/2 cup walnuts halves
1 tablespoon butter, melted
1 1/2 teaspoons sea salt (divided)
3 pounds sweet potatoes
1 1/2 tablespoons olive oil
2 tablespoons cinnamon-sugar
1/3 cup packed brown sugar
3 tablespoons good-quality maple syrup
1 1/2 cups mayonnaise
1/2 cup chopped celery
1/2 cup chopped onions
1/2 cup sweetened dried cranberries
Freshly ground sea salt and pepper to taste
