INGREDIENTS
Pie Crust
2 1/2 cups unbleached all-purpose flour
1/2 teaspoon salt
20 tablespoons cold unsalted butter, preferably a high-fat, European-style butter, chilled and cut into 1/2-inch pieces
4 to 10 tablespoons ice cold water
Peach Filling
8 large, ripe but firm peaches (3 1/2 pounds)
1/2 cup pure maple syrup
1 1/2 tablespoons fresh lemon juice
1/4 cup plus 1 tablespoon unbleached all-purpose flour
1 teaspoon ground cinnamon
Egg wash made with 1 egg yolk mixed with 2 tablespoons water
