INGREDIENTS
For Meatballs:
1 pound ground chuck
½ cup jasmine rice or long-grain white rice
1 teaspoon cumin
1 teaspoon smoked paprika
2 teaspoons garlic powder
½ teaspoon pepper
1 teaspoon salt
1 chipotle, minced
1 egg
For Soup:
2 Roma tomatoes, diced
1 small poblano pepper, diced
1 medium zucchini, diced (about 3 cups)
1 small white onion, diced
3 cloves garlic, minced
1 serrano pepper, minced
1/3 cup cilantro, chopped and more for garnish
Juice of 1 lime
1 teaspoon cumin seeds, crushed
1 teaspoon coriander seeds, crushed
1 teaspoon oregano
Salt and pepper to taste
8 cups low-sodium chicken broth
