1 ½ cups all-purpose flour, plus more for dusting
1/2 cup spelt or whole wheat flour (if unavailable, you can also use all-purpose flour)
1/2 cup granulated sugar
1/2 tsp kosher salt
1 tsp baking powder
1/2 cup salted Ontario butter, frozen
1/2 cup Ontario sour cream
1 large egg
1/3 cup local Cheddar cheese, finely shredded
