This is a Frisch's Big Boy Restaurant recipe. If you have access to a Frisch's you may use their own Blue Cheese Dressing in the sauce.

Ingredients
- 1 pound cavatappi pasta (large corkscrew type)
- 2 cups half and half
- 1 pound queso blanco processed cheese, cut into 1-inch cubes
- 1/2 cup blue cheese dressing
- 1/2 cup shredded parmesan cheese
- 1/2 teaspoon cayenne pepper, ground
- 1 cup cheese-flavored crackers, crushed, for topping
How To Make blue mac & cheese

Step 1Cook pasta per instructions on box while making the sauce.

Step 2Combine the half & half and cubed queso blanco cheese in a heavy saucepan over low/medium heat, stirring often until melted.

Step 3Whisk in the Parmesan cheese, cayenne pepper, and blue cheese dressing. Stir until melted into a sauce (it will be slightly thin at this point).

Step 4Drain fully cooled pasta and place in a greased casserole dish. Pour the sauce evenly over top of pasta. Cover and bake for 25 minutes in a preheated 350º oven.

Step 5Remove cover and sprinkle the crushed cheese crackers on top and bake uncovered for an additional 5 minutes.
