Ingredients

  • 1 pound cavatappi pasta (large corkscrew type)
  • 2 cups half and half
  • 1 pound queso blanco processed cheese, cut into 1-inch cubes
  • 1/2 cup blue cheese dressing
  • 1/2 cup shredded parmesan cheese
  • 1/2 teaspoon cayenne pepper, ground
  • 1 cup cheese-flavored crackers, crushed, for topping

How To Make blue mac & cheese

  • Step 1
Cook pasta per instructions on box while making the sauce.
  • Step 2
Combine the half & half and cubed queso blanco cheese in a heavy saucepan over low/medium heat, stirring often until melted.
  • Step 3
Whisk in the Parmesan cheese, cayenne pepper, and blue cheese dressing. Stir until melted into a sauce (it will be slightly thin at this point).
  • Step 4
Drain fully cooled pasta and place in a greased casserole dish. Pour the sauce evenly over top of pasta. Cover and bake for 25 minutes in a preheated 350º oven.
  • Step 5
Remove cover and sprinkle the crushed cheese crackers on top and bake uncovered for an additional 5 minutes.
