This is very highly adaptable. Use any berries or combo of that you wish at any given time. Use your current greens of choice. Soft fresh fruit also works very well here, think summer ripe apricots for instance.

Ingredients For summer berries and greens salad

  • DRESSING:
  • 2 tsp
    poppy seeds
  • 3 Tbsp
    honey or to taste
  • 1/4 c
    olive oil, extra virgin
  • 2 Tbsp
    white wine vinegar
  • SALAD:
  • 5 oz
    fresh baby spinach or any greens of choice
  • 1 lb
    fresh ripe berries or soft fruit
  • 1/2 c
    toasted nuts of choice
  • 1/4 md
    red onion, thinly sliced (optional)

How To Make summer berries and greens salad

    Add the poppy seeds, honey, olive oil, and vinegar to a sealable container. Secure the lid and shake well to combine. Refrigerate an hour to up to 7 days. .

    Combine the greens, berries, nuts, and red onion slices (if using) in a large salad bowl or on a platter

    Pour the dressing over salad, and lightly toss. Refrigerate about 10 minutes before serving.
