girdle scones- a rustic scottish scone
This is not a sweet scone. Scones were originally made in cottages and in a time when sugar wasn't easily available.

Ingredients
- 2 cups flour
- 3 tablespoons baking powder
- 2 tablespoons butter
- 2 pinches salt
- 1/2 cup currants
- 1 cup milk (this is approximent)
How To Make girdle scones- a rustic scottish scone

Step 1Sift the dry ingredients into a bowl. Cut or rub in the butter until it resembles fine breadcrumbs.

Step 2Add enough milk to make a soft dough and shape into a circle on a lightly floured board. Don’t add in all your milk at once in case you do not need all of it. If your dough looks a little sticky don’t be afraid to add a wee bit more flour.

Step 3Roll out to roughly 13/4 inch thick and cut into eight wedges.

Step 4Cook on a hot greased girdle, hotplate or frying pan until golden and cooked in the center - this will be roughly 5 minutes on each side. When you turn your scone wedges place them gently on the hot surface and only turn once.

Step 5Serve hot from the pan, slathered in butter and your favorite jam.
