1 teaspoon dijon mustard

2/3 cup red wine vinegar
•
Romaine lettuce, cleaned and chopped
•
Cucumber, chopped
•
Fresh, sweet cherry tomatoes, halved
•
Sweet or bell pepper, (fresh or roasted), chopped or sliced
•
Feta cheese cubes, crumbled over top (even better with marinated feta)
•
Optional: red onion slices, Greek olives, fresh basil leaves and/or pickled pepperonci peppers
