Stuffed artichoke bottoms are easy and impressive and can be made a day or two ahead of time and baked when needed.

Ingredients

  • 2 cans (15-ounce) artichoke bottoms, drained and patted dry
  • butter for pan
  • 11 ounces goat cheese, room at temperature
  • 1/2 cup grated parmesan cheese, plus more for topping
  • 4 cloves garlic, minced
  • 3 tablespoons fresh chives, chopped small
  • 2 tablespoons fresh basil, minced fine
  • salt and black pepper

How To Make austrailian goat cheese stuffed artichoke

  • Step 1
    Preheat oven to 375 degrees. Butter the baking sheet .
  • Step 2
    Cut a thin slice from the bottom of artichokes to level and remove any remaining tough outer leaves.
  • Step 3
    In a bowl, combine goat cheese, Parmesan cheese, garlic, chives, basil and salt and black pepper to taste. Spoon filling into artichokes, sprinkle with additional Parmesan cheese.
  • Step 4
    Bake for 15 to 17 minutes or until lightly browned and bubbling. Serve immediately.
