sweet pickles

This is an old recipe. My Grandma Lillie and Mom Burgess made these same pickles;they both tasted the same and everyone loves them. I use them in my potato salad, chicken salad, tuna salad and anything that calls for sweet pickle relish. These are a lot of work, but they are well worth it.

Ingredients

  • 7 pounds cucumbers, washed and sliced
  • 5 tablespoons pickling lime
  • 2 cups canning salt
  • 3 tablespoons alum
  • 11 cups sugar
  • 1/2 gallon apple cider vinegar
  • 1/3 cup pickling spice

How To Make sweet pickles

  • Step 1
    In a large canning pot, place the prepared cucumbers, ( note to self,:add water to first line in pan) lime and enough water to cover the cucumbers, stir with a long handled spoon;set overnight-stirring occasionally.
  • Step 2
    Make sure you have 2 sinks or 2 large pans, clean. Pour cucumbers into a clean sink, let drain. Plug and add water, rinse, while turning cucumbers with hands, drain, repeat procedure a total of four times.
  • Step 3
    Wash out pot, add salt and water, stir to dissolve salt-add cucumbers and enough water to cover then soak for 6 hours, stirring occasionally, again, rinse 3 times as in step 2.
  • Step 4
    Wash pot out, add a little water in pot, add alum, dissolve-add cucumbers and enough water to cover, stir, bring to boil and cook 4 minutes.
  • Step 5
    Drain pickles and let them cool a little (so you can handle them). Rinse and drain 3 times. Wash pot.
  • Step 6
    Make a syrup of sugar and vinegar in pot. Tie the spice in a clean cloth(I use part of an old clean t-shirt or you can use cheese cloth, or a spice bag if you can find one) and drop it in the pot-add cucumbers, cover pot. If you need additional syrup-add 1 cup of sugar, 1/2 cup vinegar(There should be enough syrup to cover the pickles) Bring to a boil and boil 20 minutes. Put into prepared jars with lids, and turn upside down for 10 minutes to seal.
