Ingredients For spicy moroccan carrot salad

1 lbcarrots, grated

1/2 cpine nuts (preferably toated) or chopped dates

4 Tbspextra virgin olive oil

1 Tbsphoney, splenda or sugar

3 Tbspfresh lemon juice
-
3/4 tspfreshly grated ginger

1/2 tspcinnamon
-
1/4 tspred chili powder or to taste

generous pinch of salt
How To Make spicy moroccan carrot salad

1Make The Dressing: By combining all the dressing ingredients in a jar or a glass and mix well. Let the dressing sit at room temperature while you prepare the carrots.

2Wash and grate the carrots. You can use ready-grated carrots if you are short on time or energy, but freshly grated carrots will be juicier. Place the grated carrots and pine nute or chopped dates in a bowl.

3Add the dressing and mix well.

4Refrigerate and serve chilled.
